Easy Cheesy Croquettes
I find it both challenging and fun to constantly come up with a variety of tasty nutritious dishes for my growing toddler; challenging because a full-time mom has only that much free time, but I definitely enjoy the creative process of cooking and seeing him eat my food with gusto!
Every kid - and adult - loves fries and potatoes and in this household, we never say no to patate and formaggio. Just the other day, the hubby made a batch of gnocchi (will share the recipe soon!) and this time, I decided to make these Easy Cheesy Croquettes that anyone can make at home. They also keep well and can be frozen. Enjoy!
Easy Cheesy Croquettes
Ingredients for 30 croquettes
Potatoes - 2 medium ones
Sweet potato - 2 small ones
Edamame - 10 pods (or peas)
Panko crumbs - 3 tbsp
Grated Parmesan cheese - 2 tbsp
Turmeric - 1/2 tsp
Salt - 1/2 tsp
White pepper - a dash
Cooking oil - 2 tbsp
Method:
1. Boil the potatoes and sweet potatoes on medium heat in a pot of water (enough to cover them) for 20 mins.
2. When cooked, drain and let the spuds cool down before peeling and cutting into big chunks.
3. Combine the potatoes and the other ingredients in a bowl and mash them well.
4. Let the mixture sit in the fridge for at least half an hour before forming into croquettes. Just spoon a mixture into your hand and turn it around so the edges are smooth - I like them in these flat madeleine shapes as they are fast to brown.
5. Heat 2 tbsp of cooking oil in a nonstick pan or pot and gently place about 10 croquettes inside. Let them shallow fry with the lid on on one side for 30 seconds and turn over to fry for another 30 seconds till slightly brown.
6. Drain on kitchen paper and let them cool down before serving on their own or as I did on some salad leaves (so he will eat more greens).
*Tips:
- You can replace the edamame with peas, corn, or carrot.
- Instead of frying, you can bake them at 180C for 15mins but I prefer frying as it’s faster for me. Try them and give me your feedback!
