Wholesome Oatmeal Pancakes With Banana & Nutella
Last Sunday I woke up inspired to cook some pancakes and decided to mill some rolled oats into flour. It’s superrrr easy as all you have to do is blend them for less than a minute in a processor or blender till you get a fine powdery texture. Alternatively you can also buy ready oat flour from Mustafa which has an amazing Bakery section.
Instead of regular round shapes, I fashioned them into characters like Hello Kitty and Rilakkuma Bear - just have a good laugh if they turn out misshapen and use your imagination to add details and features with bananas and Nutella! You can also use maple syrup, honey, jam and fruits like strawberries and blue berries. Have fun and tag me if you try this wheat-free pancake recipe!
Wholesome Oatmeal Pancakes With Bananas & Nutella
Ingredients for 8 pancakes:
Rolled oats - 1& 1/2 cup (blend in processor or blender till fine)
Salt - 1/4 tsp
Sugar - 1/2 tbsp
Baking powder - 1/2 tsp
Egg - 1
Milk - 1 cup
Vanilla extract - 1/2 tsp
Butter - 20g (about a tablespoon)
Method:
1. Combine oat flour, salt, sugar and baking powder in a bowl and mix well.
2. Beat the egg, milk and vanilla extract together, and add the mixture to the oat flour mixture.
3. Stir well with a wooden spoon or whisk to make sure there’s no lumps. Let it rest for 5 mins.
4. Heat a nonstick pan and melt the butter. Scoop a small ladle of the pancake batter into the pan and start with a round disc before forming other shapes you desire!
5. Cook till bubbles form on the surface and turn it over gently and cook for another 20 seconds till brown. Serve warm with your preferred toppings.
