Mango Banana Crumble
I made this tropical mango banana crumble years ago after trying it at a cafe - the naturally sweet banana and mango taste so good together, plus it's really easy to make, without the need to make the crumble from scratch (ok I like to take shortcuts to save time). It takes less than half an hour to whip up this delicious dessert for your family or for a potluck party during this festive period!
I decided to share the recipe when I received a package from Tesco Singapore for Christmas and one of the goodies was the Tesco Finest Christmas Pudding Shortbread Tin ($11.95). These butter shortbread with dried currants and cinnamon is the perfect hack as my instant crumble toppings! Here's the recipe for you to try this Christmas:
Mango Banana Crumble
Ingredients for 4 pax:
Large bananas - 3 (cut into 2cm slices)
Ripe mango - 1 (de-seed and cut into cubes)
Butter - 40g
Oats - 2 tbsp
Brown sugar - 1 tbsp
Shortbread biscuits - 5 (I used Tesco Finest Christmas Pudding Shortbread Rounds but any shortbread biscuits will do)
Method:
1. Melt 25g butter (about a tablespoon) on low heat in a nonstick pot and add the sliced bananas and mango.
2. Stir on low heat for 1 minute, turn off stove and empty contents into a small baking dish.
3. Put the shortbread biscuits in a ziplock bag and crush them with a spatula or roller into rough crumbs.
4. Mix the biscuits crumbs, oats, and brown sugar together and sprinkle generously over the fruits. Place small knobs of the remaining butter on top of the crumble.
5. Bake for 15 to 20mins at 180 deg C in a preheated oven till the crumble turns a bit golden brown. Remove and let it cool before serving on its own or with your choice of ice cream.
*Tips:
- Instead of a baking dish, you can also use individual ramekins or muffin baking paper cups which are great for parties.
- You can always replace the fruits with fresh red apple or even pineapple. But you have to saute the diced apple and/or pineapple for 10mins with 2 tbsp of sugar and 1 tbsp of water till they are soft.
- For a festive touch, add some dried cranberries or dried currants to the crumble.
